ARENSBAK™ has deep roots in Copenhagen. The fine drops of ARENSBAK™ are crafted by sommelier Emilie Øst-Jacobsen and flavor designer Bram Kerkhof. The purpose was to create a tasteful and complex drinking experience without alcohol building flavors from the ground up and pushing the boundaries of flavors through fermentation. ARENSBAK™ er en del af en ny international kategori, kaldet wine proxies. Til forskel fra almindelige alkoholfri vine - hvor alkoholen fjernes - er wine proxies fremstillet efter nye metoder, hvor der produceres ud fra en base af fx te, forskellige lag af frugt, krydderier og kompleks fermentering. Wine proxies passer godt til mad, da man ved at bruge de nyeste teknikker, kan skabe smagsoplevelser med syre, krop og tanniner.
