Jersey milk has approximately 20% more protein and 30% more milk fat in a given amount of milk compared to the average of all breeds. Jersey milk contains over 20 percent more calcium than other milk. It also contains the highest concentration of B2. Even when all or part of the milk fat is removed for low fat milk. The whole milk taste remains due to the solids. The high milk fat content is excellent for all types of dairy produce including creams, yogurts, cheese and ice cream.
