Brio Baking Inc

Brio Baking Inc. is a California Benefit Corporation, structured as an S Corp, and operates dba Cafe Brio and Brio Breadworks. Brio Breadworks was founded in October of 1998 by Serge Scherbatskoy, an under-employed chef who had sold his country restaurant and moved to the big town of Arcata, California. The first week of production we had two small displays, in Wildberries Marketplace and the Arcata Coop, which sold out in hours, to our great delight. After one week we were achieving our break-even production of 318 loaves per day. We had four employees, who did all the production work, mixing, shaping baking and cleanup, while Serge and his wife did the packaging and distribution— making deliveries in their personal cars. Brio Breadworks now has 23 employees and five delivery vans, we make between 1400 and loaves per day. Operations are run by Sheldon Heath, General Manager, assisted by a Sales & Delivery manager and a Production manger who oversees the crafting of our production. We operate on two shifts: mixing begins at 7:30 in the evening, baking around eleven at night, the next shift starts around three in the morning, delivery trucks start rolling at six o’clock, and most deliveries are completed by one in the afternoon. Then we spend the next several hours cleaning and getting ready to do it again. We deliver to 18 retail stores and as many restaurant accounts, all within Humboldt County. Cafe Brio, founded in April of 2007, is a fast-casual cafe bakery centrally located on the Arcata Plaza. The morning menu is built around breakfast pastries, egg dishes and fine coffee. The afternoon menu is served until early evening, and includes croques, salads, soups, and hot dishes. All baked goods are made on the premises; we focus on quality, always preparing everything from basic ingredients and fresh fruits. Bistro style is warm & inviting, inspiring a sense of community and creating a meeting place for our diverse population.
