Cooper King Distillery

Cooper King Distillery is a self-built, crowd-funded distillery near York producing sustainable spirits underpinned by craftsmanship, honesty and adventure. Founded in 2016 by Dr Abbie Jaume (a scientist) and Chris Jaume (an architect) the venture was inspired by their desire to leave the rat-race. They travelled the globe and became fascinated with the community of whisky distilleries in Tasmania - where small, independent, unpretentious whiskymakers were producing world-class whisky. With a mission to bring their discoveries back to England, the couple gave up their established careers and set up a pioneering distillery back home in Yorkshire. Their single malt whisky is the first net-zero-energy whisky in England. It’s made from UK-grown Maris Otter barley, traditionally floor-malted then mashed, long-fermented, distilled and matured on site. Their gins are England’s first carbon-negative gins and the entire distillery runs on 100% renewable energy, principally from their own solar panels. For every bottle sold, they donate to local charity the Yorkshire Dales Millennium Trust, to fund a range of environmental projects in Yorkshire. These include woodland planting, wildflower meadow restoration and funding apprenticeships for young people. The distillery are proud members of the environmental initiative 1% For The Planet.
