Su chef, Ricardo Sanz, abrió el también galardonado con una estrella michelin, Kabuki, el año Kabuki Wellington, sin embargo, fue abierto posteriormente, en el año 2007. Su servicio de sala se caracteriza por estar adaptado a la sociedad en que vivimos. Se podría decir que combina el respeto nipón con la hospitalidad española.
