Curious, considered, uncomplicated hospitality. The Love Tilly Group has been rewarding curiosity since 2010 with venues home to 300+ bottle wine lists championing up-and-coming, little-known winemakers and food that honours tradition yet is uniquely our own made with the world’s best ingredients – from Tathra Place’s free-range pork to Cantabrian anchovies. It’s considered by us, uncomplicated for guests. And it’s fun – we don’t know how to do it any other way. A bespectacled, fast-witted sommelier and a loud-shirted international businessman walk into a former stockroom in the Darlinghurst backstreets and the Love Tilly Group journey begins. Matthew Swieboda and Nathanial Hatwell met over a beer at one of Sydney’s original wine bars, Love, Tilly Devine, an energetic, intimate venue championing Australia’s up-and-coming winemakers – before it was cool. Potts Point neighbourhood favourite Dear Sainte Éloise followed in 2017, where the duo explored more global vinous horizons and purchased its first pasta extruder. A harbinger of what was to come. Honing its focus on food with the help of Scott McComas-Williams’ Michelin Starred kitchen experience, the group opened Ragazzi, a wine and pasta bar in Angel Place in 2019, followed the next year by its more casual subterranean sibling Fabbrica Pasta Shop. The latter, a bricks-and-mortar success story that came from a temporary lockdown solution: take-home pasta packs. While continuing its venture into Australia’s retail world, the group opened its most ambitious venture yet: a 120-seat Roman-inspired trattoria called Palazzo Salato.
