Ravintolan juuret ovat syvällä balkanin keittiössä ja sen itä-välimerellisessä makumaailmassa. Balkanin keittiön tunnusmerkkinä ovat mutkattomat annokset, jotka sisältävät runsaasti rehtiä lihaa ja vihanneksia. Bokan perustajina toimivat noin 10 vuotta Kuopiossa asuneet makedonialaiset veljekset ja heidän isänsä. Perheen isällä on yli 30 vuoden kokemus ravintoloista ja ravintola-alasta.
