For me, the best food is generally called “Peasant Cuisine” — recipes born out of a necessity for sustainability — a few simple ingredients combined with a know-how passed down over generations, and deep knowledge of the land, resulting in something really delicious. Nowadays, we have a responsibility for sustainability — a responsibility to our environment and to those who grow our food. My goal as a farmer-cook is to use the culture of Peasant Cuisine as a north star for seasonal, home cooking.
