Shi Concept is a company based in London, Dublin and Bath. We are working toward our own brick and mortar premises and with the help of our partners plan to make each of them unique, destination locations. Our Current Projects: • - Rōnin (Mobile Coffee Stand) A nomadic Hand Brewed Specialty Coffee Stand based between Dublin City, Ireland and in London, England. It will offer perfectly prepared hand brewed coffee, a batch brew option and an entirely different capsule approach using the OPAL One. We are also providing a number of quality options for tea drinkers and are in talks with Canton Tea, the Rare Tea Co. and Born Wild Tea. Each instance of the coffee stand will also offer a small selection of delicious treats from our own micro bakery. The project is currently almost entirely developed, its first pop-up scheduled for late January 2020. • Engineer (Mobile Coffee Bar) We have been contracted by a client to design and develop an entirely sustainable and environmentally friendly mobile Specialty Coffee Bar based in Cork City, Ireland. Founded upon the cornerstones of sustainability, ethics and quality we are constructing a zero waste coffee truck and working with some of Ireland and the UK’s most forward thinking, environmentally minded producers working today. The project is currently in its middle stages, due for launch in April, Our former projects include: 808. Espresso (Coffee Bar + Micro Bakery) The first instance of our 808. pop-up Powerscourt Townhouse in Dublin City Centre. We served high end speciality coffee sourced from Mojo Roastery which is based in Roundhill, Co. Wicklow and baked goods from our own micro bakery which developed a range of unique cookies, cakes and treats, prepared fresh every morning in the small kitchens of Pygmalion, South Williams St.
