We have developed a proprietary process to extract Rubisco (Ribulose-1,5-bisphosphate carboxylase-oxygenas), the world’s most abundant and high-quality leaf protein from a wide variety of green leaves. RuBisCo also displays promising techno-functional properties, such as a high foam volume and stability and a heat-induced gelation at low protein content. This makes Rubisco an ideal candidate not just as a key protein source but also a great additive to vegan and alternate protein products.
