Using the latest techniques science can offer, we produce some of the UK’s finest oysters. Like farmers and fishermen combined, we obsess over the timeless oystermans’ art of nurturing, hand-picking and hand-grading our oysters. However, this natural and sustainable approach is married with an unrivalled, state-of-the-art oyster depuration process. Maldon Oysters are carefully nurtured over a period of years until they are ready for our customers. Our ethos ensures that our oysters are of the best quality available. It is an ethos of impeccable quality control. We have the stock and scale to ensure that there is never a need to rush. The majority of the oysters we grow on our beds in Essex are Rock Oysters (Gigas). This oyster is known for its deep cupped shell and smooth and meaty texture. They are often described as having a rich but not overbearing flavour with a sweet aftertaste. Each oyster will pass through the hands of our team over half a dozen times before it is deemed ready to harvest. We hand turn, split and soft-grade the oysters, waiting patiently for each oyster to reach the perfect shape and size. While we embrace everything that technology has to offer in our innovative depuration process, when it comes to growing and cultivating our oysters, traditional methods and a hands-on approach have served us well.

Ideal Foods Ltd is a processor and specialist supplier of shellfish, whitefish, tuna, salmon heads and other fish by-products to companies all around the world including to the Far East. We work with all areas of the market from local fishmongers to overseas supermarkets and from fish merchants to Blue Chip international manufacturers and processors. Sustainability is at the very heart of Ideal Foods core values and the company strives to ensure that no parts of the fish go to waste. Fish heads and other fish by-products are exported to Asia, supplying the large retailers in Vietnam, Thailand and the Philippines. The frames, bellies, trimmings and offcuts are exported to the Ukraine, Poland and Latvia to name but a few. The safest part of the fish, Ideal Foods supplies to Europe’s largest baby food manufacturers and the company has become a long standing and trusted supplier of fish that meets some of the strictest food safety specifications, in this highly regulated industry. Five years ago, Ideal Foods launched its own pet food brand, ‘Purely Fish’, with a range of 100% natural treats, canned wet food, toppers and raw food for cats and dogs, all made from fish. Ideal Foods Head Office is located in Liskeard, Cornwall and its its processing factories and cold store are located in Grimsby. The company also has satellite offices in Leighton Buzzard and Manila, in the Philippines.

The Orkney Food Company Ltd
Well-known by many and immortalised by fishermen from the North of Scotland as Silver Darlings, Herring have been harvested from the North Atlantic for many decades, which has inspired James to continue to produce a range of popular herring cures with pride and heritage. James’ Grandfather Jim, had successfully cured herring in wooden barrels in the early 70’s, exporting to Scandinavia but sadly for Jim, in the late 70s the herring production ceased due to the ban on herring fishing in Scotland at that time. Thankfully, the situation has now changed and herring are being caught again; from the same waters which formed the lifeblood of Jim’s business many years ago; but are now sustainably managed for the future. Working to this day with traditional process, the recipe, now perfected by the fourth generations of the Paterson family will remain a closely guarded secret to pass down to the next generation. Building on the strengths of the family business, recent times have seen a further progression for the Paterson clan with the acquisition of the well-respected ‘Orkney Food Company’ brand. Previously known as ‘The Orkney Herring Company’, the business had sadly been placed into administration in 2012, however was revived in 2017 when James and his father, Lewis saw an opportunity and made the noble move to purchase the brand and add it to their business interests. Today sees the ‘Orkney Food Company’ thriving in the continued production of delicious marinades that delicately flavour the herring but now under the family portfolio, with a variety of additions to the range, all of which are closely guarded Paterson family recipes! Herring will always remain the mainstay of the company, a tradition in our family for four generations.

Cluny Fish Ltd
We at Cluny Fish first prepared Scottish Smoked Salmon over 50 years ago, in our traditional red brick smokehouse in the busy fishing town of Buckie. Today we carry on the same traditional process, supplying customers all over the world. From specially selected Scottish Salmon, the fillets are cured and prepared for smoking. The salmon fillets are then placed into our kilns, smoked over oak and beech fires for many hours until declared ready by our Head smoker. The final result is traditional Scottish Smoked Salmon, complimented with the aroma and taste produced by the oak fires, truly capturing the taste of Scotland
