About Ankit Paliwal

I am a food scientist and educator with more than ten years of experience teaching various subjects related to food science and technology, such as food engineering, food biotechnology, food processing and preservation, food product development, and food quality. I have developed curricula for B.Tech (Food Tech), M.Tech (Food Tech), and M.Sc.(Food Science & Nutrition) programs and have guided B.Tech, M.Tech, and M.Sc. students in major projects and dissertations. I am working as a Lecturer at the Department of Applied Sciences, School of Sciences, Fiji National University, Suva, Fiji, since March 2022. Before that, I worked as an Assistant Professor at the Department of Food Technology, Jain (Deemed-to-be) University, Bangalore, India (June 2021-Nov 2021), and the Amity Institute of Food Technology, Amity University Uttar Pradesh, Noida, India (Jan 2011-Dec 2019). I also worked as a Product Development Consultant at Artisanal Drinks for & Stirred Cocktail Mix (Apr 2018-Jul 2019) and as a Shift Brewer at SOM Distilleries & Breweries Ltd, Bhopal, India (Dec 2009-Dec 2010) and as a Trainee Brewer at Solan Breweries, Mohan Meakin Ltd, Solan, India (Sept 2009-Dec 2009). I hold a PhD in Food Technology from Amity University, Uttar Pradesh, India, on the topic "Studies on fermented millet-based products." I also have a Post Graduate Diploma in Management from IGNOU, New Delhi, a Master of Technology (M.Tech) in Food Technology and Biochemical Engineering discipline from Jadavpur University, Kolkata (W.B.) India, and a Bachelor of Engineering (B.E.) in Biotechnology discipline from Madhav Institute of Technology and Science (MITS), Gwalior, Rajiv Gandhi Technical University, Bhopal (M.P.) India. I have authored several research articles on various topics related to food science and technology, such as the mathematical modelling of water absorption kinetics, the effects of wet processing on the physicochemical and functional characteristics of millet flour, and the fermentation kinetics of sorghum grain. His publications are available on Scopus and ORCID profiles.
