Originally I am from South West England and trained to be a Chef, when I was 18 years old and graduated Culinary College with top marks, I left England in 1991 and moved to Zurich, Switzerland where I stayed for 8 years working as a Chef in several Restaurants and Hotels. In I moved to Seoul, South Korea where I was a Chef/Manager at the famous Westin Chosun Hotel and because of my character, selling skills and enthusiasm from there I transferred from the kitchen to front of the house managing many various bars and restaurants until I was promoted to be F&B Director which I thrived at up until my 8 years at the Hilton Seoul as Executive Assistant Manager controlling all operations of the Hotel especially Food & Beverage. Since 2021 I have been a Full time Professor, teaching the next generation of Hospitality Management & Culinary students at the Woosong University in Daejeon, passing on my 30 years of experience and advice. During my time here in Korea I have been an active and popular member of the expat community, I served as President and Vice President of “Les Toques Blanches Korea” which is a worldwide chef’s organization, and also a ‘Chaine Des Rottiseurs” Officier Maitre Hotelier level. I speak and read fluent German although my writing is not so good, also being so long in Korea, I have also a very high level of Korean, but not quite fluent.
