About Benjamin Bourrie
I am passionate about fermentations and currently am working on a multi-disciplinary project examining spontaneous and mixed fermentation beers with an aim to increase quality and consistency through the development of novel production and propagation methods. My past projects include researching the impact of kefir consumption on metabolic health. Through this research, we were able to develop and patent a novel method for producing kefir on an industrial scale using traditional microorganisms while maintaining the health benefits associated with traditional kefir.
