About Brian Hitsman

After many failed endeavors from clothing sales to flooring I attended Columbus State Community College for Automotive Tech. Fell on hard times and jumped into an extremely entry level position the Hyatt Regency Columbus after observing the Kitchen closely as a food runner I realized that I wanted to give it a shot. Jumped into the kitchen running adapted and realized what I wanted to do and went from there. After a year I received my first promotion and I have been using all of my time to attempt to absorb as much knowledge and ability from those around me while imparting all I know and have learned as well. While at the Hyatt Regency Columbus I was part of a team of Cooks that had to handle a upwards of 800 covers a night in as swift and quality centric manner as possible. My previous six years of experience at Charley's grilled subs prepared me for the volume brilliantly. My goal in my food adventure would be to learn and apply as many styles of cooking to the home cooking that I learned from my mother to try to adapt and innovate new styles of cooking into the rustic and traditional Korean style of cooking.
