Welcome to my profile I'm Clément, a professional in restaurant industry with over 10 years experience managing professional kitchens. After 4 years at business school and a year abroad (Chile), I chose to dive into the world of cuisine. I've worked in various models within the industry, from Michelin-starred restaurants to dark kitchens. I've worked some of the best names in the french industry such as Sushishop, Big Mamma, Apicius, Les étangs de Corot. Following 3 years in a Michelin-starred kitchen, I joined Sushishop in 2015. Over 6 years, I grew with the group, eventually becoming the director of kitchens. I led numerous projects, including developing a new production system to excel with emerging delivery players like Deliveroo and UberEats. I left the group in 2021 to embark on an entrepreneurial adventure and create a new Indian dining concept. Entrepreneurship in the midst of the COVID period proved challenging, but it's a setback, not a defeat. In May 2022, I joined the Big Mamma group as the Chief Operating Officer for the delivery segment (Napoli Gang). The journey ended three months later due to a failed fundraising attempt and a desire to cut management costs. Bouncing back, I founded my own consultancy in the restaurant industry and simultaneously spearheaded a fast-food franchise project. Teaming up with the founder of Sushishop, we successfully guided new franchisees process through all stages of integration (8 months of training). However, deteriorating real estate and economic conditions led us to terminate the project. Simultaneously, I assisted a restauratn owner in stabilizing and expanding his business by being on the floor. I spent 5 months dismantling, understanding, rebuilding, and restructuring the organization. I left the establishment in October 2023, leaving behind a functional, organized, and profitable unit. Following this extensive journey in the restaurant industry, I chose to co-found TIERRABOOST with my partner, Alexandre Maze. Tierraboost positions itself as the partner for a more sustainable agriculture by facilitating the collaboration between farmers and a network of experts. We provide tailor-made solutions to farmers through the involvement of specialized partners. Regardless of the activity, a solution exists for sustainable and economically viable agriculture.
