Currently leading the culinary operations at The Westin Dragonara Resort, Malta — a flagship 5-star property — I oversee a brigade of 70+. Blending creative flair with operational precision to deliver elevated guest experiences and strong bottom-line performance. Previously at The Phoenicia Malta, an iconic LHW landmark, I mentored and directed a team in delivering refined Mediterranean cuisine across award-winning restaurants and bespoke banqueting events. With a strong background in sourcing sustainable, local ingredients, concept creation, HACCP compliance, my focus remains on quality, fostering innovation, team development, and consistently raising the bar in luxury hospitality. I’m passionate about gastronomy, all things regional and local, especially those with craftsmanship and community value, as well as exquisite Mediterranean flavours, global influences and continuous evolution - both in the kitchen and in the hospitality strategy. I also hold an MBA in International Hospitality Management and have been honoured with accolades such as the Hilton F&B Masters Gold Medal and the 2024 WRMC Outstanding Chef Award.
