I have worked in this industry for more than 30 years from dishwasher to managing at the glorious Constantine Restaurant in the Anndore Hotel Toronto. I've also owned 17 Steps restaurant and bar. I took my business to one of the top 10 Greek/Italian/Mediterranean restaurants,#1 in Bloor West Village and as high as 32 in all of Toronto. I believe my biggest career highlight is successfully running my own business without investors on a limited budget. I led in all decisions from accounting of food and beverage to recipes and scratch menu concept with the chef. I also worked with local wineries and paired them with personal consignment wine choices. While with Hemingways I put together a book of wine tasting notes for all our wines and a menu book of all the ingredients in each dish plus which meals are dairy & gluten free. I also conceived a plan to save the restaurant up to approximately $24K over 2.5yrs by switching to electronic candles. I also greatly improved then maintained their electronic footprint on Twitter, Facebook, opened the Instagram account and improved the website with accessible areas. I am a hands on tireless lover of this business. I have been an honest communicator and leader with all of my staff ( 25 to more than 80ppl on staff ) in over 15 years of management. I always lead by example while empowering my employees to constantly learn and improve then promoting or helping with advancement elsewhere. I have forever been a believer in the fact; an employee is any businesses greatest asset. I am respectful and smile a lot. I tell a lot of stories and love to make the guests and staff feel as if you are in my home. I am a TFC season ticket holder. I love the Raptors and anything with a puck or ball ( just ask my wife ). I love big red wines, bacon and anything cooked in duck fat.even bacon.
