I believe I excel in looking, creating, and managing concepts which are ahead of the current trends, this is by studiously following trends happening overseas and meticulously dissecting these to see if they can be implemented here in Melbourne. Being a chef, owner, consultant I am an extremely creative person who can envisage an end goal, but using strategies and planning can follow up on these creative processes to bring together venues that people want to be a part of. With over 30 years in the industry in every facet, I have the knowledge, respect to be able to lead teams, to create something special, where not only my staff want to continue working for me with great loyalty, but I also gain customer loyalty, these are the seeds for success in this industry. I am currently consulting in the hospitality industry for a QSR group, where I am implementing the biggest change to the food menu they have had. This encompasses a multi store rollout, with full menu design, costings, training & marketing. My previous experience is running my own venues, where I have been involved in initial design, construction & rollout of my venues. Predominantly dealing and liaising with builders, plumbers, electricians, council, liquor licensing, staff hiring and training, which I have done by myself. I have a great understanding of complete restaurant concepts, with a focus of matching every element of the concept such as the design, food, wine etc. After taking timeout of the hospitality industry, I completed a B.Sc. Majoring in Geology. After completion of my degree, I secured a role in a Global leading Oil service company Schlumberger, where I worked within a team to complete a full geological description of the well being drilled in Realtime. This including liaising with well partners such as BP, Shell etc to offer advice in Realtime for decisions to be made regarding the drilling of a multi-million-dollar wellsite. This role gave me an insight into working for a big company and the structure, rules, engagement & regulations required within a massive corporation.
