For me butchery is a very serious job, as one deals in death. Being one myself I feel that it is my duty to honor the animals I work with as they were once living, breathing creatures full of life and energy. To properly honor them I feel as though it is my job to make sure that all parts of the animal are enjoyed by all people and to do so it is my job to educate everyone that there are ways of making delicious meals out of every piece of the carcass. Life is something worth respecting and enjoying and I think by people beginning to realize that all parts of the animal are great to eat, people might begin to realize that there are humane ways of eating meat.
