About Edward Gilbert

As a native of coastal Brazil, I grew up eating fresh, local foods. Farm to table wasn’t a philosophy, it was our way of life. So much of what we ate came from the bounty of the land-the mangos, fish, oranges, nuts and coffee. It was in those fertile soils that my passion for food was born. I came to America with my family in 1988 and food was one of the main ways my mom kept our Brazilian heritage alive at home. I was always interested in food, helping my mom in the kitchen from the time I was a young boy. My first job was in a restaurant; washing dishes for a family friend’s Italian restaurant. It didn’t take long before I was doing prep and soon after, working the line. After about five years in restaurants, I thought it would be smart to try something different. I spent a few years checking out various industries including banking and IT, they weren’t for me. In 2010, I returned to the restaurant industry and decided to pursue an education in culinary arts. In the fall of 2011 I began my associate degree at Southeast Community College and graduated with distinction in March of 2013. I continued my education with a bachelor's degree from New England Culinary Institute in April of 2015. I have experience progressive culinary growth with more responsibilities and bigger challenges in the last several years. I believe in sourcing ingredients locally, seasonally, and sustainably.
