About Eirini Pegiou

I am a flavour enthusiast who loves to explore and experiment, with a passion for proving the excellence of healthy food. My passion lies in human health, as well as the health of our planet! I'm drawn to projects and initiatives that work toward a better world from every perspective. Minimising food loss, agricultural waste and improving the flavour are the overarching missions behind my research. Within this scope, I lead and contribute to several projects focused on flavour challenges, exploring how we can better understand and preserve the sensory qualities of fresh produce, plant-based foods, beverages and beyond. How can we support this mission by decoding the right signals from food and ingredients? Volatiles—those tiny molecules—carry big potential! I love sharing and transferring knowledge and experience, while also discovering new ways to inspire and spark conversations about the value of flavoursome food and the importance of respecting it. Some of my hobbies include gardening, exploring flavours, bringing more green into everyday life, and making people smile.
