About Emily Boldrin

Beyond my career achievements in higher education, my journey in nutrition has been driven by a desire to see universal access to healthy food, irrespective of social determinants of health. Having witnessed nutritional challenges globally and locally, I have taken measures to overcome barriers like hunger and malnutrition that threaten access to healthy food, a basic human right. To act locally, I established and sustained a community nutrition garden. This initiative not only provided fresh produce to our local food bank and community centers but also empowered food bank participants by waiving their plot costs, fostering a collaborative and sustainable solution to food insecurity. I also started a Foods for Friends backpack program in our local school, ensuring families had access to nutritious foods over the weekend. To broaden my scope and recognizing the impact of cooking skills in consumption of whole foods, I developed and taught a nutrition and cooking class at a wellness center. Quickly learning that lack of cooking skills was a bigger barrier than I realized, I took the class to my own home to start at the very beginning – boiling water. By the end of the course, participants were confident in their cooking skills and their ability to prepare and make nutritious meals. Through projects like the community garden, backpack program and cooking courses, I aim to make a small but potentially significant difference in people’s lives and hope it spurs others on to do the same.
