About Eric Schulze

I am a professional molecular biologist and leadership team member that specializes in federal-level cultivated meat, poultry, and seafood policy as well as pioneer product food safety establishment. I have developed the approach and led the team that has secured the first-ever FDA safety greenlight for a cultivated meat product. I have led the establishment of the world's first Food Safety, Quality, and Regulatory Affairs team for a cultivated meat company as well as the associated federal policy to complement. I also have established and led the world's first cultivated meat cell line development team and first cultivated meat food product design team, and food safety/quality assurance team. At UPSIDE I have built successful teams that have created - the world's first food design program that builds from the cell up to the food product - cellular design - a regulatory pathway that ensures cultivated products are safe, inspected properly, and are labeled truthfully- an operationalized food safety and quality program for cultivated meat products - pipeline programs that promote science as the essential component for building novel food products - a speechwriting and messaging program that builds a Big Tent of stakeholders that support each other - the world's first coalition of cultivated producers - the Alliance for Meat, Poultry, and Seafood Innovation - a Big Tent coalition of stakeholders who align around healthy competition in the marketplace that is supportive of innovation - numerous novel intellectual properties that anchor the foundation of this new field More generally, I am trained in - Zero-to-One growth and success models for complex food startup policy, product design, & technical approaches - genetic engineering/molecular biology/genetic architecture & its food policy implementations both domestically & internationally- risk assessment and its implementation for novel food products- federal food regulatory policy development for cell-based meat, poultry, and seafood products, and - food/agricultural/technology stakeholder relationship management & coalition-building I am trained in broadcast communication and speechwriting. As a former Federal regulator, I have developed and executed regulatory policy for pioneer products within food and animal biotechnology industries for the US FDA. I have also served in a federal STEM education policy role for the US NSF. I have advised the Roundtable for Transforming Undergraduate STEM education at the National Academy of Sciences.
