About James Stuart
Born in London and raised in the US from aged 12, I got my start in hospitality operations at 13 in my family's English pub in Florida. By 23, I was in NYC, working in a fine dining restaurant and learning everything I could about food, wine, and cocktails. In my thirties, I moved into management, eventually in boutique hotels like The Bowery, working with industry legends Sean MacPherson and Eric Goode. I then shifted to development, conceiving and operating hotels and F&B concepts, most recently the Michelin-keyed Esmé Miami Beach. Now, with three decades in the industry, I co-founded Custard with designer Paul Bishop. Custard is a comprehensive hospitality studio offering a range of services from branding and concept development to management partnerships.
