I began my internship in 1984 at Ritz Carlton Boston in the bakeshop. At the Royal Sonesta Cambridge I worked as the Assistant Pasty Chef. I later relocated to Rebecca’s 21 Charles St Beacon Hill as Executive Pastry Chef. Upon moving to 18 Tremont St we rebranded ourselves as Rebecca’s Cafe and Catering. Over the years we expanded to 45 locations and increased our drop off and full serve catering dramatically. In 1993 I accepted the new position as Pastry Chef of Tosca, a division of Eat Well Hingham, Ma. I developed the dessert and bread department increasing dessert sales by 35%. I also provided desserts for our sister location Stars on Hingham Harbor. In addition I opened FireKing bakery. I returned to Rebecca’s Cafe in 1996. At Rebecca’s I managed the Bakery, Commissary and 4 locations. 18 Tremont, 28 State St.Post Office Square and 75 State. In 2005 the Commissary and Bakery relocated once more to a larger locale at 99 South Bedford St Burlington Ma. Here we continued to supply our cafes and new locations at Harvard and Northeastern Universities. I also sought out wholesale accounts such as Jules Catering, Reinhardt, VIGA and East meets West. My passion is production and excellence and lastly.I’ve been around the block.
