If you don't understand the root cause of your plant-based food issue at a cellular level, you can't measure it, nor can you manage it, and worse you can't create new opportunities that give you the framework to succeed" Everything thing we want to do with a plant, within food science or culinary, to estiosiology and skin care, to post-harvest extension and horticultural growth systems, all boils down to understanding what is happening in the plant, and most importantly, within the cell. I've been asked how I come up with so many discoveries that fall outside the confines of my experience or academic skill set. I try to explain it with analogies because it is hard to explain. I have a unique quality to virtually insert myself into the inner workings of a plant cell at a level unknown by many. Just like an architectural engineer can envision the 3 dimensional design of a building prior to construction, I can 'enter' a fully functioning cell, where my mind sees the physical, chemical, and energy transfers with the various parts of the cell: golgi apparatus, vacuole, nuclei, the electron transport chain, Krebs cycle, and heirarcial interactions between cells. I can envision the inner workings of a plant cell in three dimension, which allows me to discover opportunities to problems prior to ever designing a physical experiment. And if I already know the outcome is plausible, measuable, and manageable, then filling in the blanks is exhilarating and downright fun!
