Chef Josh Steiner began his career twenty years ago on the prairies of western North Dakota, where the food culture was steeped in pioneer exuberance. Weddings often featured homemade anise liqueur and locally sourced pork roasted in hand-dug pits. A passion for high quality, rustic food began here and followed him through ten years of culinary experience in Minneapolis, MN. There, he created innovative sandwiches and wood-fired pizzas in scratch kitchens and redesigned classic comfort foods using fresh ingredients. He left Minneapolis in 2008 and 2009 to work as a chef for Bruce Springsteen, Metallica, and the Radio City Rockettes, cooking in cities from Montreal to Memphis. Back in Minneapolis, he also worked for James Beard winner Alex Roberts at Brasa Rotisserie. Chef Roberts inspired him to focus more fully on freshness, quality, and sustainability, key tenets of farm-to-table philosophy. Chef Steiner's spirited style highlights the joy of local, organic, sustainable food.
