About Kate McCabe

I am the Co-Founder of Bog & Thunder, an eco-travel and tourism company highlighting the best of Irish food & culture. We offer bespoke food tours & curated culinary experiences; pop-up events & retreats; and co-branding partnerships. We’ve made it our mission to expand American perspectives on Irish food and culture and to be a part of a growing movement to redefine the tourism industry in the age of climate crisis. I am committed to socially and environmentally responsible business practices, and am excited to grow and develop my business with these goals in mind. Before starting Bog & Thunder with my husband, Max, I worked in communication and international human rights, with a special interest in victims advocacy, truth and reparations, and environmental justice. I have spent many years lobbying on behalf of issues related to the Irish peace process, and am particularly interested in Irish history, politics, and post-conflict justice. In 2016, I started a nonprofit called Éist, which uses creative arts & peace-building initiatives to connect communities across global justice struggles. At present, we have two active programs: the first is a visionary fiction storytelling project using lessons from Octavia Butler’s work to inform the creation of future stories in communities affected by conflict in the north of Ireland; and the second links grassroots organizers in Detroit and Derry via their shared civil rights struggles. I am also a writer, and am balancing several fiction and nonfiction projects in my spare time. I am open to conversation and collaboration in any of my areas of interest.
