About Marc Munk Simonsen

With over a decade of hands-on experience in the specialty coffee industry, I’ve had the privilege of shaping coffee quality and culture across Denmark — from senior roles in companies like Joe & The Juice and Slow to founding my own consultancy and advising Michelin restaurants, coffee shops, and offices. I bring a strong technical foundation to my work, with deep expertise in both premium coffee equipment and the product itself — from green sourcing and roasting to brewing and sensory evaluation. I’m also a certified La Marzocco technician with extensive experience in machine setup, service, and workflow optimization. Since 2018, I’ve served as board member and co-chair of the Specialty Coffee Association of Denmark. During this time, we’ve seen remarkable growth in the industry’s reach and engagement. At the Danish Coffee Festival 2025, we welcomed over guests and 50 exhibitors — including 20 from abroad — and hosted Denmark’s official championships in barista, brewers, and cupping. These efforts have helped elevate the national coffee scene and strengthen professional standards across the board. My work in coffee has taken me around the world, where I’ve led trainings and workshops on brewing techniques, quality control, and café operations — helping teams and individuals deepen their knowledge and raise their standards. Whether improving workflows, optimising cup quality, or building strong industry partnerships, I aim to combine passion, precision, and long-term perspective in everything I do.
