About Megan Taylor

Megan Taylor graduated in August of 2017 from The University of Arizona with her Bachelor of Science in Nutritional Sciences and a Minor in Biochemistry. During her time as an undergraduate student, Megan worked as a preceptor in the Nutritional Sciences Department. She worked for one year as a preceptor for an Introduction to Nutrition class, and for one year as a preceptor for a Nutrition and Metabolism course specifically for Nutrition students. During this time she led weekly discussion sections, facilitated classroom discussion and learning, held office hours, and assisted with grading. This role helped strengthen her understanding of basic nutrition as well as complex metabolic processes and diseases.Megan then went on to be a Health Promotion Volunteer in the Peace Corps in Mozambique. During this experience, she trained in the Portuguese language, malaria care, HIV/AIDS care, and organizational strengthening. She worked in a rural health center, primarily assisting in malaria testing and treatment for babies and young children. She also facilitated health talks while working with the non-government organization CHASS in order to train activists on how to give health talks to the community members in the local language.After returning home from the Peace Corps and moving to Flagstaff, Megan was accepted into the Master of Public Health and Nutrition Program at Northern Arizona University in 2019. Since the start of the program, she has become a teaching assistant and supplemental instructor for several courses at NAU. In January of 2019, Megan became involved in a cross-sectional research study working with low-income Flagstaff families who utilized a summer meal distribution service for their children. Megan is currently completing her dietetic internship and is expected to graduate with her master’s degree in August of 2021. Her passions include providing nutrition education for differing lifestyle preferences, cultural backgrounds, and disease state(s), as well as advocating for societal changes of perception of bodies and female empowerment. She hopes to gain more industry knowledge and one day use her skills to open a weight-inclusive private dietetics practice that specializes in eating disorder and Health At Every Size care.As of October 2021, Megan also passed her exam to become a Registered Dietitian and is now a credentialed RD through the Commission on Dietetic Registration.
