With over 15 years of work experience in the culinary industry, I am a passionate and versatile head chef who specializes in catering, banquets, and fine dining. My mission is to deliver high-quality and nutritious food to diverse and adventurous clients and staff in challenging and remote environments. I am currently the head chef at Antarctic Logistics & Expeditions, where I manage daily kitchen operations for Union Glacier Camp and other locations across Antarctica. As the head chef at Antarctic Logistics & Expeditions, I oversee the daily tasks of twenty kitchen staff, providing daily meals for 120-280 staffs and clients, in-flight meals, expedition projects and short excursion meal planning. I am also responsible for food storage organization, supply chain management, and food safety planning. I have successfully handled the logistics and challenges of cooking in extreme conditions, ensuring the satisfaction and well-being of our guests and colleagues. I have also demonstrated my creativity and flexibility by adapting to various dietary requirements, preferences, and cuisines. Some of the skills that I have applied and developed in this role are catering, banquets, fine dining, menu planning, ordering, budgeting, staff training, and quality control.
