About Nicole Ervin

I've always had a passion for wine and everything about it. From the terroir of the vineyard, the winemaking process, to enjoying the finished product with friends and family, there’s something unique with each bottle and a story to be told. It’s all these things that ignites my passion. Attending college at Cal Poly San Luis Obispo allowed me to get my feet wet with the Paso Robles wine region. Although I got my degree in Nutrition and later started my own fitness and nutrition business in Orange County where I was born and raised, I found myself taking any excuse I could to drive up the coast to Paso to explore and would like to ask questions of anyone in the wine industry who would let me pick their brain. Fast forward to 2020 and having more time on my hands due to the pandemic, I submerged myself into wine by studying through WSET. By 2021 I had completed WSET level 3 with merit and knew wine was more than just a hobby and needed to be my new career path. Taking the leap of faith to move to the Central Coast was the best decision I've made professionally, as now I get to work at my happy place, DAOU. In my current role, I get to share my passion for wine in a whole new light by ensuring our guests are receiving the best wines for their cellar, special occasion, or gift to a fellow wine lover.
