About Nikki Schaeffer

I have two big, all-encompassing passions in my life. Creating and Sharing For the last 30+ years I have been cooking, baking, washing dishes, cutting, dicing, picking the best ingredients, and creating plates. I believe that what we eat should look as great as it tastes and taste as great as it looks, and what defines the title 'Chef'​ is the love and care involved in the preparation of the food. TLC is every true Chef's secret ingredient. As a Chef Instructor I absolutely LOVE distributing as much knowledge that I have acquired over the decades to my culinary students that I can in a two hour class. As a manager, empowering people and developing them into being the best that they can be in their professions is most meaningful to me. That philosophy has carried over into my love for the microphone doing Voice Overs and my passion for writing, especially about food. A true Professional understands that there is no substitute for the love of one's work, whatever that work may be.
