About Paul Carrier

Paul Carrier is a 45-year veteran in restaurant institutional food service industry. Throughout his career he has worked a vast variety of industry positions including bus person, dishwasher, prep cook, line cook, expediter, kitchen organizational trainer, chef, executive chef, food service director to name a few. Prior to joining the faculty at Milwaukee Area Technical College, he served as a part-time faculty member at UW-Stout in Menomonie, Wisconsin and a coordinator/trainer of a culinary jobs training program (Mis-en-place) for a local Minneapolis,Minnesota area food bank. In his newly-created 2019-2020 current role with Milwaukee Area Technical College, he is a faculty member of the college's Culinary Arts Department, teaching Business and Industry Food Service/Catering course. In March 2021, he assumed the position of Lead Faculty - Department Chairperson of the MATC Culinary Arts program. For the past 20 years, he had been the instructor/coordinator in the college's School of Pre-College Education Division in the area of Culinary Arts Career Pathways Program. Paul teaches, coordinates, and manages a new "state of the art" culinary lab. Paul also plans and coordinates as well as teaches in a community-based Culinary Jobs Training program at the Wisconsin State Fair Park's Youth Center where for the past 18 years has trained 40 urban youth ages 17-22 years old each year to plan, prepare and serve meals during the 11 day run of the state fair. Paul also leads and manages relationships with key local industry operators, national associations, as well as various industry partners including recently the National Restaurant Association Educational Foundation's "Industry Subject Matter Expert Work Group" for the development of the Food and Beverage Service Industry Competency Model in August 2014. Paul continues his involvement with the local industry on an international level by continuing to gain more knowledge and "Hands On" experience by working as a Food Operations Co-Worker for the IKEA Food Operations division at the IKEA store location Oak Creek Wisconsin.
