About Peter Flugge

Peter started his career in the early 1980’s and in 1990, bought San Lorenzo in from Alan and Eileen Bond with 2 Michelin Start chef Gary Jones, and won the coveted “Best Restaurant in Australia” by Australian Gourmet Traveller in 1994. During this time, Peter was a founding member of the WA Sommeliers Association and The South Terrace Traders Association in Fremantle. After selling San Lorenzo in 1997, Peter moved to the Gold Coast opening Crown Towers Resort, then moved to Melbourne for the opening of Georges. He then went on to open and manage Mecca in Southgate for 4 years, then set up Mecca Bah and Livebait in the Docklands. As co-owner with the Mecca Group, Peter opened Bar Bosh in Knox and then Fountain Gate. Both cafes/bar were sold after 7 years. Peter headed south for a year to run the beautiful Montalto before heading back home to Brighton where he managed The Baths Restaurant.During this time at The Baths, Peter started training for HTA and Cutting Edge, developing and teaching all aspects of Hospitality from RSA and FSH to FOH operations and Business Management.Peter was promoted from full time trainer to Training Co-coordinator at CEG which morphed into his new role as Business Development Manager. This led to the inception of White Fox Hospitality, consulting to the Restaurant Industry working with the likes of Taxi Kitchen and the Sovereign Hotel Group, Zero 95, Zigfrid's and Sailor's Rest in Geelong.Peter joined the Restaurant & Catering Association of Australia in January of 2016 as the Membership Manager for Victoria and Tasmania. This allowed Peter to gain a unique perspective of the industry by being engaged with a wide and diverse spectrum of hospitality businesses and related Industry Organisations.In a twist of fate, Peter joined the Brotherhood of St Laurence in 2018, enabling the fulfilment of a life long passion to serve the local community and dramatically broaden his horizons. This was a pivotal moment leading to a plethora of new opportunities and eye-opening experiences, one being Peter joining the Board of Purpose & Growth, a registered charity and social enterprise supporting from primarily refugee and asylum seeker backgrounds.
