About Peter Lacava

Currently I am the General Manager for a privately held Yacht Club in Coronado California. Prior to my current position, for the last 4 years, I was General Manager for the Left Coast Brewing Company, I also worked with the Sentinel Restaurant Group. successfully opening two restaurants, Driftwood Kitchen in Laguna Beach and Hendrix in Laguna Niguel. Previously, I worked for one of the most progressive growth organizations in the restaurant industry today, Yardhouse Restaurants Inc. For the bulk of my experience, I worked as an Operating partner for the Fish House division of King's Seafood restaurants, involved in the day to day operations, hiring, staff development, inventories, Budget and Marketing plans, P&L review and creating the culture within the restaurant. I began as a Manager of the Calbasas location and was promoted to General Manager for the Flagship restaurant, King's on Pine Ave in Long Beach. I was given the opportunity to buy into the Tempe Marketplace location as an Operating Partner and continue to grow the brand and concept in the Arizona region. Working for King's was beneficial due to the family atmosphere and consistent coaching it provides to its Managers as well as crew. Specialties: Restaurant Openings, Budget development and mangement, Foodservice law, Health codes, Management Development. Branding and Identity, Established the curent systems for Inventory mangement process for both Food and Beverage, Assisted in the oversight of the General Contractor during the "Build Out" phase. Developed new Vendor relationships and oversaw contract negotiations during the opening process of over 15 restaurants.
