I've been in the Culinary profession for over 35+years. I was trained by my father, who was one of the personal chefs to President Johnson. My father taught me to be a “working chef” which means to be hands on and side by side with my team and not just sitting at a desk! I have always remembered to do just that in all my years of working in this industry! I don’t know any other way! I grew up in the Cheasepake Bay area.(Yes, I make amazing crab-cakes!) I have lived in Washington D.C,Maryland, Madrid, Spain, North Carolina and Virginia. But Tulsa,Oklahoma has become my home since 2004. I enjoy living here with my wife, children & four of my eight grandchildren. My years of experience include: gourmet foods, hotels & resorts, culinary director, catering business owner, banquet manager, executive chef, catering chef, executive sous chef, chef manager and also 18 years in the Healthcare industry for upscale retirement communities. I am also a pastry chef! I've managed million dollar accounts and saved my owners lots of money, too! My expertise other than quality foods is in restoration, food cost management, eliminating waste, training staff, safety, sanitation, and also as a food consultant. I enjoy creating menus and getting businesses turned around. And I believe we have done just that here at the Marriott & now our new Ruffins Event Center! Happy New Years to all!
