About Scott Seales

I possess more than 16 years of progressive experience in the Hospitality industry, 12 of them being Las Vegas based. My professional history includes almost every position the F+B world has to offer, from line cook/dishwasher to senior management. Most recently I was the Craft and Import beer specialist for Johnson Brothers of Nevada Distribution. During my time with JB I was involved in many different areas of beverage distribution. I focused mostly on education and menu development for accounts throughout the Las Vegas Valley. While at Anthem Country Club, I was the primary F+B manager. Handling all inventory, scheduling, payroll, staff training, marketing and graphic design, guest relations and interpersonal relations (discipline and coaching). My responsibilities as the Bar/Club manager at Stoney’s Rockin’ Country allowed me to rebuild relationships with F+B reps and vendors for many major distribution companies in the Las Vegas area. I used these relationships to acquire the best pricing possible for all items brought into the club. This allowed me to control my cost of goods while still being able to provide the best product possible. At the same time, I redeveloped the employee handbook ensuring that we gave our staff every opportunity to give the best customer service possible. My responsibilities as AGM were varied, from staffing, cost control and payroll, to guest resolution, staff training and menu development. I successfully reinvented our craft beer menu design, layout and overall utility. My supervisor also relied on my ability to create new cocktails, bring in new craft beer and educate the staff all while controlling costs. While Managing at Fleur by Hubert Keller, I also helped with updates to the existing cocktail menu. In addition I brought new life into the absinthe program through education, demonstration and marketing. I am a very knowledgeable bartender and certified beer server through the Cicerone program. Also I am an Avid home brewer, and all around people person. Proficient in Micros, Aloha and Infogenesis. I am also well versed in Open Table and NoWait reservation systems.
