About Serena Carpentieri

Durante il mio percorso di studi ho acquisito le seguenti competenze tecniche: • tecniche e strumenti della ricerca scientifica e tecnologica nonché della caratterizzazione degli alimenti e della modellazione dei processi tipiche dell’ingegneria alimentare e di processo; • tecniche e strumenti della gestione del Controllo qualità; • tecniche e strumenti della progettazione e gestione dei processi, delle apparecchiature e degli impianti utilizzati nelle industrie di processo in generale e per la trasformazione e la conservazione degli alimenti. I progetti didattici a cui ho fatto parte sono i seguenti: • Food packaging: characterization of an unknown commercial bilayer film,(PE/PET), in order to understand its composition and verify the thermal, chemical and mechanical behavior, through a DSC analysis, permeability test, static and dynamic mechanical test, static contact angle measurement; • Refrigeration cycle: to design a walk-in cooler plant for food storage application that is made by Air evaporator, Water condenser, Compressor, TEV; • Food process design: realization of a Business plan on the idea of introducing on the market a new product, which is gluten free dried pasta, starting from the deglutination of traditional flours. My contribution was for the production and investment part, in particular for the drying process design.
