Sono nato nel 1991 a Manduria (Ta). La mia carriera inizia con collaborazioni ed esperienze in ristoranti collocati in varie città italiane. La mia posizione, esperienza e competenza si è sviluppata sino alla gestione completa di un ristorante. Ho maturato 8 anni di esperienza nella ristorazione, gestione food cost, nella redazione di inventari, nella selezione del personale e nella creazione e gestione dei menù in rapporto alla stagionalità dei prodotti nel rispetto delle materie prime e dei loro ‘scarti’. Ho condotto negli ultimi anni studi approfonditi che vanno dall’analisi di nuove tecniche di cotture (in particolare le basse temperature), alla fermentazione di alcuni alimenti, allo studio di sapori e delle proprietà organolettiche nonchè alla elaborazione di piatti che consentano di soddisfare le esigenze culinarie contemporanee. I was born in 1991 in Manduria (Ta). My career began with collaborations and experiences in restaurants located in various Italian cities. My position, experience and expertise have developed to the complete management of a restaurant. I gained 8 years of experience in the food service, food cost management, preparation of inventories, recruitment and creation and management of the menu related to the seasonality of the products in respect of raw materials and their 'waste'. I have conducted extensive studies in recent years, ranging from the analysis of new cooking techniques (in particular low temperatures and sous vide), fermentation of certain foods, study of tastes and organoleptic properties as well as processing of dishes that make it possible to meet the contemporary culinary requirements.
