About Shannon Librizzi

As a life-long learner on a mission to make a meaningful impact in the world, I received a MS in Nutrition and Dietetics from Metropolitan State University of Denver in May 2023, and graduated Magna Cum Laude from Siena College in May 2011 with a BS in Marketing Management and a minor in Global Studies. I completed the required supervised practice hours to become a Registered Dietitian through Sodexo's Dietetic Internship in Denver, CO. I currently work part-time as a Dietary Assistant in the Nutrition Services department of Swedish Medical Center, a Denver-based acute care hospital within the HCA Healthcare family, where I am gaining valuable clinical nutrition and patient care experience. My career interests include oncology nutrition, preventative care, functional nutrition, WIC community nutrition education, workplace wellness, and nutrition research opportunities that explore the intersection between food, mental health, and overall wellbeing. I am ultimately interested in contributing to an organization that endeavors to make a positive difference in the community. Curious, detail-oriented, and driven, I have experience in a variety of fast-paced, team-oriented environments. Through my background in client account management in digital marketing, and event production within the wellness industry, I developed a strong skill set in project management & client relations and worked with a variety of people & personalities, preparing me for the road ahead. As an advocate for accessible health and wellness programs, I also completed my Holistic Health Coaching Certification through the Institute for Integrative Nutrition in January 2018 and my 200 Hr Yoga Training Certification in April 2018. My experience working in the Nutrition Department of two acute care hospitals, an Ayurvedic Wellness Clinic, a Yoga Studio Community Center, start-ups such as Ox Verte (a plant-forward food company working to make organic, locally-sourced, sustainable and seasonal eating a part of everyday office life) and Nuun Hydration (a clean electrolyte and sports supplement brand), have all inspired me to further pursue my passion for health & wellbeing and nutrition science. As a Graduate Research Assistant for the Nutrition Department of MSU Denver, my research focused on sustainable food systems to improve food access, including best practices to reduce on farm food loss and consumer food waste. In my free time, I enjoy traveling, hiking, skiing, and supporting environmental sustainability initiatives.
