II Roccolo di Monticelli is a small organisation located in the County of Verona, Italy; its creation is the result of the restoration of an old family vineyard that today allows us to obtain a genuine product, simply and directly from our grapes. In 2015, at the end of my Bachelor's Degree in Agriculture,| decided to devote my time to this vineyard, taking care of it myself, with the help and support of my uncle Maurizio. Before this, we had been producing small quantities of healthy and genuine wine just for our family; we found ourselves passionate about it and, therefore, decided to focus full-time on the development of this exciting project. The land is on the calcareous hills between Verona and Soave, inside a small “clos”. Here the vineyards from the ‘60s adjoin an area of centuries-old olive trees. The admiration we have for our territory leads us to respect its soil and biodiversity; this allows for products that are not only genuine but also an authentic expression of the terrain where the vineyards grow. Paying constant attention to the vineyard and its fruits is Fundamental: this is the only way to get healthy grapes; as it is from healthy grapes that healthy wine originates. Consequently, in the farmland, we abolish chemical fertilizers, weeding and pesticides; and we reduce to the minimum the soil tillage and grass scything to maintain the vitality of our terrains. In the winery, the production processes chosen are the least invasive, along with the absence of additives and handling. This permits the grapes to show their natural expression and to obtain very personal wines that express the best quality of our land. This production method requires a great understanding ofthe rhythms of nature, whose extraordinary beauty is revealed. Therefore, the relationship man - territory - wine acquires great importance.
