About Stephanie Alsbrook

Stephanie D. Alsbrook MS, RDN, LD is a Registered Dietitian and Clinical Instructor in the Department of Nutrition and Family Sciences at UCA. She is currently pursing a Ed.D. in Human Resource and Workforce Development from the University of Arkansas. Stephanie received a BS in Nutrition from UCA, completed her dietetic internship at the University of Arkansas for Medical Sciences, and returned to UCA to complete her MS in Nutrition. Stephanie has a background in implementing federal programs, engaging partners, grant management, and strategic planning. She was recognized by the United States Department of Agriculture for her leadership in the Team Up for School Nutrition Success mentoring program. Stephanie has prioritized research in school wellness, alternate breakfast models in school food service, and the federal Fresh Fruit and Vegetable Program. She has served as an advisor on legislation and state rules for nutrition, farm to school, and hunger relief. Prior to her work in state government, Stephanie served as the coordinator of multiple Diabetes Self-Management Programs in central Arkansas and obtained her Certified Diabetes Educator credential. She also has experience in adolescent weight loss, pediatric renal dietetics, and pediatric intensive care nutrition. Stephanie's research interests include workforce training and development, leadership development, and community and public health nutrition. Ms. Alsbrook teaches foundational nutrition classes, food economics, nutrition services administration, and experimental food science. Additionally, she facilitates the community nutrition practicum for undergraduate students. She is a member of the Academy of Nutrition and Dietetics and the School Nutrition Association. She has represented Arkansas at the National Governors’ Association Summit on Reducing Childhood Hunger and serves as an annual judge for the Arkansas 4-H Hall of Fame and Governor’s Award. Stephanie enjoys making woodcrafts, rock climbing, and traveling with her family.
