About Stephanie Alsbrook

Stephanie D. Alsbrook, MS, RDN, LD is a dedicated Registered Dietitian and Clinical Instructor in the Department of Nutrition and Family Sciences at the University of Central Arkansas (UCA). Currently pursuing an Ed.D. in Human Resource and Workforce Development from the University of Arkansas, Stephanie combines her passion for nutrition with a focus on workforce development and leadership. Stephanie earned her BS in Nutrition from UCA, completed her dietetic internship at the University of Arkansas for Medical Sciences, and returned to UCA to complete her MS in Nutrition. With a robust background in implementing federal programs, engaging partners, grant management, and strategic planning, she was recognized by the USDA for her leadership in the Team Up for School Nutrition Success mentoring program. Stephanie's research priorities include school wellness, alternative breakfast models in school food service, and the federal Fresh Fruit and Vegetable Program. She has actively contributed to legislation and state rules for nutrition, farm-to-school initiatives, and hunger relief. Before her role in state government, she coordinated multiple Diabetes Self-Management Programs in central Arkansas and earned her Certified Diabetes Educator credential. Her diverse experience also includes adolescent weight loss, pediatric renal dietetics, and pediatric intensive care nutrition. In her teaching role, Stephanie instructs foundational nutrition classes, food economics, nutrition services administration, and experimental food science, while also facilitating the community nutrition practicum for undergraduate students. She is a committed member of the Academy of Nutrition and Dietetics and the School Nutrition Association, where she serves in leadership roles at the state and national levels. She represented Arkansas at the National Governors’ Association Summit on Reducing Childhood Hunger, and currently mentors students in hunger advocacy projects at local homeless shelters in Central Arkansas. Stephanie's research interests span workforce training and development, leadership development, and community and public health nutrition. In her personal time, she enjoys making woodcrafts, rock climbing, and traveling with her family.
