About Steven Cornet

How do we create tasty and juicy plant-based meat? And how can we produce highly functional plant-protein ingredients while ensuring a high yield? And what does actually happen inside an extruder? These are just some of the questions that I work on as a project manager at NIZO. My name is Steven Cornet and I am trained as a food- and biotechnologist. I hold a PhD from Wageningen University, where I studied the hydration properties of alt meat using a combination of experiments and physics-based modelling. Most of my current work takes place at the interface between ingredient production, food formulation, processing, and sensory. I am driven by a desire to create sustainable foods that are a joy to eat.
