About Susana Sanchez

I am originally from Brownsville, Texas, but moved to Austin to attend St. Edward's University where I pursued an education in Biology and minored in Psychology. In my time at St. Edward's I worked along side a professor to conduct research on plant samples to see if they had antimicrobial properties and can be used to treat bacterial infections. I have always been interested in nutrition and believe that there is a need for nutrition education and resources, especially in communities of minorities like mine. For that reason I pursued a masters in nutritional sciences at the University of Texas at Austin, where I learned to use nutrition to promote health and prevent disease. I also learned about research in the field of nutrition by working at the Functional Food Center where I helped edit, write, and publish articles related to nutrition in a peer reviewed journal. To further my knowledge and skills in dietetics I joined the UTRGV Masters in Dietetics where I have learned about medical nutrition therapy, food service systems and counseling and putting it into practice in different rotation sites such as Valley Regional Hospital, BISD, Nuestra Clinica Del Valle, HEB and WIC. By increasing my knowledge and gaining experience in nutrition and dietetics I hope to become a registered dietitian so that I may help educate people about the importance of nutrition for health. In doing so, I hope to help others to prevent the development of chronic diseases and help those with chronic disease manage and improve their health.
