About Truman Wan

Back in my teenage, I built up a strong passion on both cooking and chemistry -not surprisingly I chose "Food Science" as my life-long career. I followed my passion to a gourmet country, Japan. Now I am working with ADM as an alternative protein technologist. Using the power of plants based ingredients and some top notch food tech, I replicate the sensory experience and nutritional benefit of eating animal origin. Specialized in creating savory applications including meat analogue, soup and other savory products. I believe alternative protein is a key answer not only to food shortage but also to environmental issue. 10 years experience as a product developer in a dairy company (including 4 years first hand experience in factory) gives me expertise from from ingredients selecting to commercializing from prototype to production scale. Trilingual (Chinese, English and Japanese) with a international attitude.
