About Ty Kennington

After almost 2 decades of cooking throughout some of Canada's most breathtaking locations, I have found a home here in Victoria, BC at the Fairmont Empress. I began my culinary journey working in a pizzeria in Waterford, Ontario during high school. I would have no idea back then where my journey would take me. After a year of studying culinary arts in Waterloo, Ontario I took a leap of faith and signed up to do my apprenticeship at the Fairmont Banff Springs Hotel in Alberta. After completing my journeyman and red seal certifications I continued to work for another 5 years before making another leap and moving to Victoria, BC to become head chef of Fishhook on Mermaid's Wharf. During the pandemic we unfortunately had to shut our doors and I found myself running several other restaurants over the years and even left in industry all together to pursue a career in UX/Graphic design. I have now found a home at the Fairmont Empress. Rejoining the Fairmont family as Sous Chef and now the Administrator of Food & Beverage.
