Né de la rencontre de deux esprits partageant la même vision, GAIA est un concept novateur « fait-maison », qui allie culture, tradition grecques et imagination. Élaboré et développé par deux professionnels de l’industrie hôtelière, Evgeny Kuzin et Chef Izu Ani, dans le but de créer une expérience culinaire entièrement nouvelle. Établi à Dubaï en octobre 2018, Gaia a ouvert son homologue à Monte-Carlo en août 2019, avec des plans d’expansion mondiale.
